Chicken with Lemon and Capers

This is the easiest, go-to meal on my recipe roster.  Whenever I'm stuck and can't think of a thing to make, this is what I throw together.   Couldn't be more simple to make, and it's more impressive than your average pan fried or baked chicken breast.  Thought you may need a little quick and easy, meal inspiration today! :)

Ingredients:
  • 2 large Chicken Breasts
  • 1 small jar of Capers
  • 1 cup or 1 can of Artichoke Hearts in water
  • Juice from two Lemons
  • 1 tablespoon Unsalted Butter
  • Olive Oil, Salt and Pepper
Directions:

-Sear chicken breasts in olive oil (3-4 minutes on either side until golden brown).
-Turn pan to low, put lid on pan and cook chicken another  5-7 minutes each side.
-Take chicken out of the pan and rest. Use lemon juice to deglaze the pan.
-Add capers, artichokes and butter and sautee' for about 4 minutes or so.  Salt and pepper to taste.
-Slice the chicken and top with artichoke, caper mixture.
***Serve with pasta or rice and garnish with lemon halves.
