Every year I say to myself, how does football season last this long? There's snow on the ground! I suppose I only think of football as being a fall sport, but I know my husband thinks of football until some team he cares about wins a bowl game :) The team he cares about may or may not have a great chance of winning, but that doesn't mean we can't eat some food, have some people over and drink a beverage or two :) On that note, I hope you caught my Simple and Easy Tailgate segment on Channel 7 this morning! I hope you did, if not, here are a few pics and the recipes that were featured.

Housepitalities Football Brie
- 1 sheet frozen puff pastry, pre-packaged
- ½ cup walnuts or pecans
- 1 (8-ounce) wheel Brie
- ¼ cup raspberry preserves
- 1 egg, beaten
Directions
Preheat oven to 375 degrees F.
Defrost puff pastry for approximately 15 to 20 minutes and unfold.
Lay the puff pastry out on a flat surface. Spread the raspberry preserves in a small area in the middle of the puff pastry about the size of the brie wheel. Place the brie on top of the preserves; place the walnuts or pecans on top of the brie. Gather up the edges of the brie, pressing around the brie and tuck till the seam is tight, like you’re wrapping a present. Flip over, seam side down. Cut extra sheet of puff pastry into a small football shape and lay on top of brie. Brush the beaten egg over top and side of Brie. Place Brie on a cookie sheet and bake for 20 minutes until pastry is golden brown.

- 2 pounds good quality ground lamb
- 2 tablespoons minced garlic
- 2 tablespoons garlic powder
- 1 tablespoon dried oregano
- 3 tablespoons minced red onion
- 2 tablespoons whole-grain mustard
- 1 1/2 tablespoons olive oil or other oil
- 8 small rolls
- 8 large pimento olives
Directions
In mixing bowl add the ground lamb, seasonings, red onion and mustard. Mix the ingredients together gently. Do not overwork the meat or it will become tough. Form the mixture into mini burgers, approximately 2 1/2 ounces each.. Fry the burgers in olive oil for about 3 to 5 minutes each side, depending on your desired doneness. Serve on rolls with skewered olive on top. Best with the spicy hummus as a garnish.
Housepitalities Spicy Hummus
- 1 (14.5 ounce) can chickpeas (garbanzo beans), drained
- 2 rounded tablespoons Tahini/Sesame paste
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon crushed pepper flakes
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 cloves garlic, grated into the mixture
- Coarse salt
- 1 whole lemon juiced into mixture
Directions
Combine beans, tahini, oil, pepper flakes, cumin, coriander, garlic, salt, and lemon juice in a food processor or blender, grind into a smooth paste. Transfer to a small dip dish and surround spread with warm pita wedges and veggies
