Panko Pork Cutlets

These pork cutlets are soooo tasty, healthy and yummy!  Panko is virtually carb free, and a great bread crumb subsitute.  In fact, I love panko more than regular ol' bread crumbs. :)  The thin cut of pork is very lean and the fresh lemon gives it so much flavor.  This recipe couldn't be easier and is a great way to boost your new years resolution to eat better.  Regardless, they're so yummy you won't even know you're eating healthy.....I know you'll add these to your weekly menu without a doubt! 

Housepitalities Pork Cutlets with Lemon

Ingredients:
6 thin cut Pork Cutlets
2 cups Panko Bread Crumbs (usually found in the Asian Foods aisle)
2 eggs
Cayenne
Salt and Pepper
2 Lemons
Olive Oil

Directions:
Beat eggs in shallow bowl, pour panko into seperate shallow bowl.  Season egg with a few dashes of salt and pepper and a pinch of cayenne.  Dip cutlets into egg and transfer cutlets one at a time into panko bread crumbs.  Coat evenly and press crumbs into the cutlets to make sure they're fully covered.  Heat skillet and generously cover the bottom of the pan with olive oil, about 1/4 of a cup.  Sautee' cutlets, 4 minutes on either side.  Cutlets should get brown and crispy and cook up very quickly!  Squeeze lemon over cutlets, don't be shy with it!  Serve with arugula salad, dressed with vinegar and oil and maybe some grilled potatoes and you've got a meal!
