Turkey Noodle Soup

It's "Souper Sunday" again :)  And what's more appropriate than Turkey Noodle Soup on the Sunday after Thanksgiving!?  I'm whipping some up as we speak, but we're still so full from the last 3 days of stuffing ourselves that we may not eat till much later.  It'll be perfect during "The Amazing Race", our other favorite Sunday ritual.


Housepitalities Turkey Noodle Soup

Ingredients:

  • 4 cups chicken stock or turkey stock
  • 1.5 cups pulled or diced left over turkey
  • 1 yellow onion, rough chopped
  • 2 stalks of celery, diced
  • 2 whole carrots, peeled and rough chopped
  • 1 clove of garlic diced and 1 clove of garlic grated into the broth 
  • 3 cups egg noodles (about half a bag)
  • Juice of 1 lemon
  • 1 tablespoon garlic powder
  • Salt and pepper to taste
Directions:
Bring stock to boil for 2 minutes in a large soup pot over high heat. Add turkey, carrot, onion, celery, and garlic. Lower heat and simmer for 2 minutes. Add egg noodles and cook 5 more minutes. Remove from heat and salt and pepper, to taste.  Add the lemon juice and serve with crackers or crusty bread!  Yum :)

ADD MORE STOCK! Definitely needed to add more stock after the noodles were added :) 6 cups of stock or stretch it with water for sure!
