Christmas Pasta

Good Morning!  Happy Sunday :)  So, here's your comforting Sunday recipe.  It's my traditional "Christmas Pasta".  During the week of Christmas I always make a big batch of this yummy pasta so that we can warm it up on the fly, in between cocktail parties, Christmas luncheon's, shopping, present wrapping and general chaos. ;)   It's super easy and super yummy....chicken, peas, creamy tomato sauce and lots of parmesan.  It looks festive, a little like Christmas in a bowl, and tastes soooo good.

1 package Linguine
1 jar of your favorite pasta sauce (I love Sockarooni by Paul Newman)
1 cup of heavy cream
1 cup of frozen peas
1 cup of freshly grated Parmesan
2 chicken breasts
Salt and Pepper
1/4 teaspoon red pepper flakes

Boil pasta and peas in salted water until they are al dente.  Pan fry chicken breasts or grill and let rest.  To a sauce pan add jar of pasta sauce, cream, red pepper flakes and 3/4 of a cup of Parmesan (save the remaining for garnish).  Combine sauce with pasta and top with sliced chicken breast, remaining parmesan and a little freshly ground pepper for flavor.
