Artichoke Obsession.....

You'll notice that a ton of my recipe's include artichokes.  I never realized how obsessed I was with artichokes until I started blogging, but man, I'm in love. :)  Here is a great recipe to add to your Christmas day before-dinner-snacks or even your NYE party menu.  You'll love these!  They were a total hit at our Christmas party last weekend.  Bonus- they're incredibly easy to make.


Housepitalities Stuffed and Tucked Artichokes

  • 1 can artichokes in water
  • 1 package prosciutto, or about a quarter of a pound
  • 1/4 cup of goat cheese
  • Pepper, Olive Oil
  • 2 tablespoons of high quality balsamic vinegar

Directions:

Drain artichokes and if they're not already halved, cut them in half.  Lay them out on a cookie sheet or cutting board and place small teaspoon size balls of goat cheese on each artichoke. 

Cut prosciutto slices in half length wise and then in half again, width wise.  Should be about 2 inches long by 1 inch wide...approximately.  Wrap the artichokes and goat cheese with the prosciutto and lay seam side down.  Drizzle with a little olive oil and sprinkle with freshly ground pepper.

Broil on low for about 5-8 minutes.  Watch closely.  prosciutto should be crispy and brown, may want to flip half way through for ultimate crispy-ness :) 

Let cool for about 2 minutes and drizzle with balsamic vinegar.   Serve immediately.
